On the highest point of the island of St. Thomas, in the U.S. Virgin Islands, is the Mountaintop Bar, known for their world famous banana daiquiri. I’m not usually one for banana cocktails, but this was one of the most delicious summer drinks I had ever enjoyed. I had to re-create this summer slush for my friends back in Chicago, so I’ve partnered with Malibu Rum to keep the #BecauseSummer celebrations going!I recently had a spontaneous pool party and knew exactly what drink I was going to whip -up for my guests – the tropical banana daiquiri! This summer, Malibu Rum wants to celebrate every day like it’s a summer vacation. I love this mentality and living in Chicago, it rings true since half of the year is near-arctic weather. This cocktail brought me back to the beaches of the Virgin Islands, and will surely make you feel like you’re on a summer vacation while sipping.
I ended up combining a few recipes I found online to create my own! When I’m hosting friends for a dinner or pool party, I want to offer them something special and great-tasting.. but also don’t want to slave on my end preparing it. I want to enjoy having friends over just as much they (hopefully!) enjoy coming over. This banana daiquiri is a super easy recipe that doesn’t call for any outlandish seasonal ingredients.
Recipe (4 servings):
- 2 large bananas
- 1 cup coconut milk
- 1 lime, juiced
- 6 cups ice
- 4 parts Malibu Rum Original
Combine all ingredients in the blender, and blend! I’m trying to be a bit healthier and did not include the sugar in my recipe. The drink was perfectly sweet enough for my tasting – but if you’d like a sweeter slush.. add-in a 1/2 cup of sugar! Garnish with a lime slice and top it off with half an ounce of Malibu Rum if you’re feeling it! This simple, summery drink is the perfect remedy for a hot July day and is best enjoyed with friends.
